Boudin and Cracklin

Boudin and Cracklin. Boudin is rice with pork liver, pork meat all in a thin natural casing. Cracklin is fried pork skin with some fat and meat with Cajun spices. I knew I would like the Cracklin, but I also unexpectedly liked the boudin more. 😊
