First attempt at making Snow’s BBQ famous pork steak. It taste really good, but it was way too tender. I was looking for a texture that was had some solid chew or mouth feel. Not something you could eat without teeth. My mistake, I believe was wrapping the pork steak in foil for the last hour. I was worried that it would have been too dry.

Followed instructions from @texasmonthly also did a the same mop as well.

Next time, I will smoke smaller steaks to get more bark and more smoke rings. And I will not wrap in foil at all… … . @snowsbbq
