Best noodles I have ever made. Shanghai scallion of noodles 蔥油拌麵 and with, of course, a fried egg. So simple and yummy. Love it. With olive oil, light & dark soy sauce, sesame oil, and some sugar. I used Japanese noodles. But you could use almost any noodle. You first make the scallion oil with the oils and sauces and simmer for about 15 to 20 mins.
