Boudin and Cracklin. Boudin is rice with pork liver, pork meat all in a thin natural casing. Cracklin is fried pork skin with some fat and meat with Cajun spices. I knew I would like the Cracklin, but I also unexpectedly liked the boudin more. 😊

peacemaker - fried shrimp and roast beef Po-Boy sandwich and fried shrimp platter with fries and potato salad. Could barely finish the PO-boy but shrimp platter. So full the potato salad was yummy!
